We just downloaded mobilejoomla and got it installed on our server. However we do not want it live yet to users coming to our website until we have it fully configured. Is there a possible test page we can go to from a mobile device so we can see how everything looks and works before we make it live to the general public?
You can disable plugins of "mobile" group (Mobile-AMDD, Mobile-Simple, Mobile-Domains, and Mobile-Scientia) and switch to mobile mode manually using
yoursite.com/?device=xhtml - for smartphone mode
yoursite.com/?device=iphone - for iphone mode
yoursite.com/?device=auto - to reset mode to default
yoursite.com/?device=xhtml - for smartphone mode

Mobile-AMDD, Mobile-Simple, Mobile-Domains, and Mobile-Scientia
Am I supposed to also disable the "Mobile Joomla!" mobilebot plugin?
I have tried it with the "Mobile Joomla!" mobilebot plugin enabled, but then the site is still live to the general public.
If I disable this plugin and try to go to mysite.com/?device=xhtml it just pulls up the main desktop site.
What am I doing wrong.

I have disabled all of the plugins you listed but I kept the "Mobile Joomla!" mobilebot plugin enabled. However if I pull up the domain on my iPhone it still goes to the mobile version site. I don't want the general public to be able to see the mobile version of the site until it is ready.
Most likely you visited website on your device earlier (MJ saves detected mode to cookies).
