Before the YouTube plugin was able to see the video directly on the site while now it's a link to YouTube ...

It is how Mobile YouTube plugin works. Instead of loading full iframe page from YouTube, it loads preview image only and uses it as link to YouTube page. If you don't like this kind of optimization, just remove this plugin.
