Need Help Configuring Mobile Joomla for One Site

Installed Mobile Joomla and Elegance template on Joomla 1.5 site, demandworks.com. Saw that it needed lots of work, then uninstalled. Need to make it use a different menu than the main menu, remove references to Joomla on the footer, use our logo in header, and also want advice on how to keep it up once you make it nice for us. Good English language skills essential.
