Hello everyone I just bought the premium version, but I can not set the home page of my site www.coupdoeil.eu

What would you like to get on mobile homepage? If the same modules you have in desktop version, just make copies of them and publish in positions of mobile template (see position names in MJ settings page), or change name of one of mobile template positions to name of desktop position where the module is published.

Could you visit mobilejoomla.com/uatest.php and post results here? It might be that Galaxy Note 3 is detected as tablet device (but it shouldn't be actually).
