We just started in on template modification, csss, etc...

My client selected "Standard Version" on their iPhone - it displayed the full web version (makes sense).

But - now they can't switch back to the Mobile Version. What do they need to do to switch back to the Mobile Version?

I had the same problem on my iphone... click once on standard version and always have it.
You have to delete the cookies and empty the cache of Safari (I did both, but maybe only one is required, cookies?)
Go to 'Settings > Safari' and delete the cookies and empty the cache.
I restart the iphone and I got the mobile version of my website.
